Fresh food is one of the foundations to a healthy life, so we take pride in serving you fresh ingredients. Additionally, our registered dietitian is available to assist Members with any dietary restrictions or questions.

Cascades Dining Room

The Cascades Dining Room offers an upscale—but always warm—dining experience, with made to order fare served to Members six nights a week. Cypress culinary staff is pleased to offer a variety of options including daily Chef’s Specials ranging from Modern American Cuisine to regional and international specialties. Our chefs procure the finest meats and poultry, local produce, and sustainably-sourced seafood to create offerings that appeal to all palates.

Top Of The Falls Grill

The Top of the Falls Grill offers a high-quality but casual dining experience. The menu includes entrees such as filet mignon and cedar plank salmon as well as pub-style sandwiches and hearty salads. Casual dress is welcome in this low-key but lively environment.

Private Dining

If you’re hosting family or friends, the elegant Oaks Room can serve as your private dining room. The Oaks Room seats twelve and is a perfect setting for birthday parties, anniversaries, or larger parties in need of a quieter space.

In-Home Delivery

With our in-home delivery, you can order your favorite dishes off our menus and have them delivered to your door. Your meal is only a call away, and there is no additional charge for this convenience.

Meet Our Dining Team.

Brian Strausbaugh

An original staff member, Brian joined The Cypress from Umstead Hotel & Spa and Herons restaurant. He started as Fine Dining manager, spent a time in Community Life Services, and took the helm of food and beverage as Director of Fine Dining in 2017. Brian has over 20 years in the hospitality industry, including upscale hotels, golf resorts, restaurants, bars, catering, and corporate events.

John Mersinger

Executive Chef John Mersinger has spent his entire career working in restaurants and hotels. After earning his associate degree in culinary arts and hotel restaurant management, he worked in St. Louis before moving to North Carolina. John joined The Cypress in 2010 from Azure Grill and has delighted our Members with his culinary creations ever since.

Sean Anderson

Executive Chef de Cuisine Sean Anderson has a degree in Culinary Arts from The Culinary Institute of America and has been serving Members at The Cypress since 2008.

Jamison Rogers

Executive Sous Chef Jamison Rogers joined The Cypress in 2013. He previously worked at Rocky Top Hospitality where he honed his skills working for four different restaurants and three amazing chefs.
